Chocolate cookies with low-sugar pistachio coconut cream

Dough: 200 g of Light whole-wheat flour 100 g of Butter (soft) 80 g of Xucker Like Sugar 10 g of Hot chocolate 1 Egg (M) |

Chocolate cookies with low-sugar pistachio coconut cream
- Mix the soft butter with Xucker Like Sugar using a hand mixer. Add the light whole-wheat flour, egg and hot chocolate and knead into a homogeneous dough.
- Preheat the oven to 180°C. Roll out the dough on a piece of baking paper and cut out cookies using a round cookie cutter. Remove any excess dough.
- Bake the cookies for about 9 minutes and leave to cool (keep an eye on them while they are baking, otherwise they can brown too quickly). In the meantime, proceed with the remaining dough as in step 2. Use a small cookie cutter (we used a Christmas tree here) to cut out the dough in the middle of the cookie and bake in the oven for 9 minutes.
- Spread about 1 teaspoon of sugar-free pistachio-coconut cream on the cooled round cookies. (For easier spreadability , heat the pistachio-coconut cream in a water bath or for a few seconds in the microwave).
- Now place the Christmas tree cookies on top and finally decorate with some Xucker Like Sugar.
