Instructions

  1. For the elderflower syrup, first carefully shake out the elderflower umbels. Then, pluck the flowers and place them in a container.
  2. Use a vegetable peeler to remove the lemon zest and add it to the flowers.
  3. Squeeze the lemon juice and pour it with the water over the elderflowers and lemon zest.
  4. Let the mixture steep overnight in the refrigerator.
  5. Sterilize small bottles or canning jars with boiling water and set them aside.
  6. Pour the mixture through a fine sieve into a pot and mix with the Xucker Premium.
  7. Simmer for 3-4 minutes to make a syrup and pour it hot into the bottles.

Tip: The sugar-free elderflower syrup will keep in the refrigerator just as long as its sugar-containing counterpart, as xylitol (Xucker Premium) preserves just as well.
