Make your own mochi with Xucker
Japanese sticky rice balls, also known as mochi, are currently all the rage. This international recipe also offers a great way to transform a sugar trap into a fitness-conscious treat. Instructions
1. Mix the glutinous rice flour with Xucker Premium. Add the water and stir until a smooth, homogeneous mixture forms.
2. Place the bowl in the microwave at 800 watts for 3.5 minutes until the dough rises. Do not open or stir during this time. Let the mixture cool for 10 minutes, as it will be very hot.
3. Meanwhile, mix the peanut butter with Xucker Premium for the filling.
4. Since the mixture will now be extremely sticky, be sure to dust the work surface with plenty of potato starch. Roll out the mixture and stretch it with your hands until you have a thin, round dough.
5. Roll out the dough as large and thin as possible the first time, as each subsequent roll-out becomes increasingly difficult. Cut out round circles using a round cookie cutter or an upside-down drinking glass.
6. Place a teaspoon of peanut butter into each circle and place a strawberry. Fold up the ends and press together until the mochi is closed.
