
Orange marmalade with ginger
This orange marmalade with ginger is the perfect fruit spread for the cold season. Refined with star anise, it adds wonderful aromatic notes to buttered bread, porridge, or yogurt. Make your own orange marmalade without added sugar Made with 2:1 gelling sugar instead of sugar, this orange spread contains 85% less sugar* than the store-bought version. The remaining sugar in the finished marmalade comes from the oranges' own sugar. This recipe is designed for two jars, but can be scaled up to your desired quantity. *For comparison: Store-bought orange marmalade has around 60g of carbohydrates, including 50g of sugar per 100g. This is equivalent to 17 sugar cubes.
Instructions
- Peel four oranges and remove the white pith from all segments.
- Cut the orange segments into small pieces and put them in a pot.
- Grate the zest of the last orange and add it to the pot.
- Then peel the 5th orange, remove the pith, and cut it into small pieces.
- Finely grate a piece of ginger and add it to the oranges in the pot. Add the star anise and water.
- Now add the gelling sugar and boil the marmalade for 3-5 minutes, allowing it to bubble vigorously.
- Then pour the hot orange marmalade into sterile jars.
Tip: Take your time when removing the white pith from the oranges, as the orange marmalade can otherwise become very bitter.
