Instructions

1. For the red wine cake, first finely chop the chocolate chips. Alternatively, you can finely grate a bar of dark chocolate. In any case, the chocolate should be as finely ground as possible, but not melted.
2. Preheat the oven to 170°C fan/convection oven.
3. Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form.
4. Mix the butter with the egg yolks, Xucker Premium, and Vanillexucker.
5. Add the wine and rum and mix.
6. Mix the dry ingredients, except the chocolate, in a separate bowl and stir into the egg yolk and Xucker mixture.
7. Now add the chocolate first and fold in the beaten egg whites last.
8. Pour the batter into a greased and floured Bundt pan. Alternatively, use a silicone pan.
9. Bake the red wine cake for 45 minutes. Use a toothpick to check if the cake is baked through and bake for another 5 minutes if necessary.
10. Let the cake cool completely and then remove it from the pan.
11. Mix a glaze from erythritol powder and a little red wine and spread it over the cake. Decorate with more chocolate drops, dried rose petals, or as desired.

Tip: The cake tastes best if the glaze is allowed to set for a while.
