Instructions

1. To make the strawberry jam, first thaw the strawberries or, if using fresh berries, wash and remove the stems.
2. Boil three preserving jars and their lids and set aside on a clean towel.
3. Puree the strawberries to the desired consistency and bring to a boil with the gelling sugar. Boil gently for 3-4 minutes.
4. Shortly before the end of the cooking time, add the shot of rum and remove the pot from the heat.
5. Wait a moment until the jam stops bubbling and then carefully skim any foam from the surface.
6. Pour the hot jam into the jars and turn them upside down. This will seal the screw caps and extend the shelf life of the jam.
