Vanilla pudding is probably one of the most popular desserts. It's just a shame that this creamy dessert is traditionally thickened with starch. This causes blood sugar levels to rise unnecessarily. We therefore looked for an alternative and found it in guar gum and agar agar. The result: creamy vanilla pudding without starch! Cooking low-carb vanilla pudding without starch For the sweetness, we naturally use Xucker instead of sugar – specifically, a blend of Xucker Light and Xucker Premium. This makes the vanilla pudding low in sugar and full-flavored sweet. The remaining sugar comes from the milk and cream.

Instructions

1. For the starch-free vanilla pudding, first sift the guar gum into the milk, stirring constantly, and let the mixture rest for about 15 minutes. The milk will thicken slightly during this time.
2. Stir the Xucker Light and Xucker Premium, as well as the vanilla bean pulp, into the milk.
3. Add the agar agar to the milk and mix well.
4. Stir in the two egg yolks well. Now slowly heat the vanilla milk over medium heat, stirring continuously. The mixture should boil briefly.
5. Then pour the pudding into two bowls and let it cool completely. Enjoy!

Tip: If you want to prevent the pudding from forming a skin, cover the pudding with some baking paper or plastic wrap. Make sure it sits directly on top of the pudding and doesn't trap any air.
