Bee sting muffins with vanilla pudding filling The crispy almond crust gets a caramel-like note from our calorie-free raw cane sugar substitute, Xucker Bronxe. For an extra portion of protein, low-fat quark is used in the batter and in the pudding cream. Vanillexucker is also used. Instructions
- To start the muffins, first prepare the pudding according to the recipe. Alternatively, a pudding can also be cooked from pudding powder and Xucker instead of sugar. We use our pudding recipe without starch to save on empty carbohydrates.
- Now prepare the almond crust. To do this, boil butter, water, and Xucker Bronxe and toss the flaked almonds in it. Set aside and let cool.
- Preheat the oven to 160°C (320°F) convection.
- For the muffin batter, beat butter, Xucker, and Vanillexucker in a food processor until fluffy.
- Then stir in the eggs and then add the low-fat quark.
- If the batter is too thick, stir in a splash of water.
- Fill the batter into 12 muffin cups and distribute the almond crust on top.
- Bake the muffins for about 25 minutes. The toothpick test will tell if they are done.
- While the muffins cool, prepare the filling. To do this, use the whisk attachment of the food processor to beat the butter with powdered erythritol.
- Then stir in the low-fat quark and the low-carb pudding until a homogeneous cream is formed.
- Cut the muffins horizontally. Use an (ice cream) scoop to scoop out a hollow in the bottom halves and distribute the pudding cream on all the muffins. Put the tops back on and serve. Enjoy!
