Chia pudding was all the rage for a while, and although the hype may have faded, it’s still undeservedly overlooked. These tiny seeds are considered a real superfood thanks to their fiber and omega-3 fatty acid content. However, since they’re typically consumed in smaller amounts, chia seeds aren't a miracle cure. Properly prepared and sweetened, our vegan chia pudding made from the swelling seeds — which can absorb up to 25 times their weight in water — is a real treat. If you haven’t tried it yet, now is the time! Thanks to the sweetness from calorie-free erythritol, it's a delicious low-carb snack. We also use Vanillexucker in this recipe.

Instructions

1. Mix almond butter with Xucker Light, Vanillexucker, and a splash of water to form a paste.
2. Gradually add the remaining water, stir in the chia seeds, and let it sit for about 30 minutes to thicken, stirring occasionally.
3. In the meantime, chop the fruit into small pieces.
4. Once the vegan chia pudding has thickened, layer it in 2 glasses with the fruit, pistachio-coconut cream, and chopped nuts.
