Chicory salad with orange and cheddar cheese
Chicory is the perfect winter vegetable. Botanically, it belongs to the daisy family and grows during the colder months. Its season extends from approximately September to April. Instructions
1. Wash the chicory, peel the shallots, and thinly slice both.
2. In a bowl, season with lemon juice, Xucker Light, oil, salt, and pepper.
3. Now fillet the orange. To do this, first cut off the top and bottom ends of the orange so that the flesh is already visible. Then, using a sharp knife, cut the entire peel into strips, removing all of the white pith from the orange flesh.
4. Now, using a knife, cut out the individual orange segments between the membranes.
5. Squeeze the juice from the remaining orange segment over the salad by hand.
6. Then divide the orange segments between two plates and garnish with the orange segments, cheddar cheese, almonds, and sprouts.
