Make your own sugar-free elderflower syrup
This aromatic elderflower syrup with xylitol is perfect for a sugar-free Hugo—the ultimate summer drink!
Instructions
- For the elderflower syrup, first carefully shake out the elderflower umbels. Then, pluck the flowers and place them in a container.
- Use a vegetable peeler to remove the lemon zest and add it to the flowers.
- Squeeze the lemon juice and pour it with the water over the elderflowers and lemon zest.
- Let the mixture steep overnight in the refrigerator.
- Sterilize small bottles or canning jars with boiling water and set them aside.
- Pour the mixture through a fine sieve into a pot and mix with the Xucker Premium.
- Simmer for 3-4 minutes to make a syrup and pour it hot into the bottles.
Tip: The sugar-free elderflower syrup will keep in the refrigerator just as long as its sugar-containing counterpart, as xylitol (Xucker Premium) preserves just as well.
