Low carb Pastéis de Nata (Portuguese custard tarts)
This keto-friendly recipe for low carb pastel de nata takes us to Portugal on our Xucker-sweet world tour. We've transformed the classic recipe into a reduced-carbohydrate version and included a few secret ingredients. Instructions
1. Preheat the oven to 180°C and lightly grease a muffin tin with butter.
2. For the pastel de nata dough, combine the almond and coconut flour in a bowl. Stir in the baking powder.
3. Melt the butter in a separate bowl and stir in the Xucker Light. Crack the egg into the bowl and mix everything together.
4. Melt the mozzarella in a microwave-safe bowl for 2 minutes.
5. Stir with a spatula, then gently stir in the flour and butter mixture. Mix until a smooth mixture forms. The cheese and dough should be completely blended. You can return the dough to the microwave for a few seconds at a time to make it easier to knead.
6. Heat the dough again for 10 seconds.
7. Roll out the dough and cut out large circles using a cookie cutter or an upside-down glass. Place one dough circle into each muffin tin.
8. Bake the crust for 5 minutes. The edges should be lightly browned.
9. For the filling, mix the cream mixture in a bowl with a hand mixer until slightly thickened, but do not overmix.
10. Add Xucker Light and mix until smooth.
11. In a small bowl, beat the egg yolk with a fork until smooth, then add it to the cream mixture. Gently combine.
12. Spoon the egg and cream mixture into the partially baked batter. Bake for 20 minutes.
13. The edges should be puffed, but the center should still be wobbly. Let the finished pastéis de nata cool completely.
14. Sprinkle with a little cinnamon and enjoy the same day for the best flavor.
