- For the caps and stems: In a bowl, mix the flour with the baking powder and ground almonds.
- In a second bowl, cream together the butter with Xucker Light and the egg.
- Now incorporate the flour mixture into the Xucker mixture. Let the dough rest in plastic wrap in the refrigerator for half an hour.
- Preheat the oven to 180°C (350°F) top and bottom heat, and line a baking sheet with parchment paper.
- For the stems, roll out one-third of the dough into a strand and cut off small pieces. Roll these into elongated stems and place them on the baking paper.
- For the mushroom caps, roll the other two-thirds of the dough into walnut-sized balls and bake them for 10-12 minutes.
- After baking, while each cap is still warm, hollow it out over a bowl using a knife and teaspoon – this is to make room for the filling!
- Let the caps cool completely and prepare the filling in the meantime. To do this, mix the ground almonds with the jam and the crumbs from the mushroom caps.
- Now fill the caps with the jam paste and carefully press the stem into the center.
- Melt the dark chocolate chips with coconut oil and dip the caps of the lucky mushrooms into it. Place them on a wire rack to drain and carefully stick several white chocolate chips onto the chocolate. Let everything chill.
