Peanut butter and jam cups
Peanut butter and jam are a natural match. Combined with salted peanuts and a simple shortcrust pastry, this dream team creates moist, top-notch peanut butter and jam cups. Our recipe is also vegan and naturally made with Xucker instead of sugar. This saves 98% of the sugar*. *Compared to a recipe made with sugar. PB & jam muffins with no added sugar In this recipe, we use strawberry fruit spread. You can, of course, also use one of the other fruity spreads with no added sugar.
Instructions
1. For the peanut butter and jam cups, preheat the oven to 180°C (top and bottom heat) and prepare a silicone muffin tin for 6 muffins, or line a regular muffin tin with paper baking cups.
2. Then, roughly mix the peanut butter, salt, Xucker Bronxe, and butter in a bowl. In a separate bowl, combine the flour and baking powder and add to the wet ingredients. Quickly knead to form a shortcrust pastry.
3. Press about 2/3 of the batter into the muffin tins.
4. Spread 3-4 teaspoons of fruit spread on each base.
5. Mix the remaining batter with the oats and chopped peanuts and sprinkle it on top of the jam.
6. Bake the cups for 15-20 minutes until golden brown. Check after 15 minutes to see if they're already browned enough.
