An incredibly delicious combination of creamy mascarpone and whipped cream filling and fluffy cake with no added sugar. The cake is perfected with fresh strawberries and reduced-sugar white chocolate. Perfect as a summer birthday cake that you and your party guests won't be able to get enough of. Strawberry mascarpone cake recipe Instead of table sugar, we use our sugar alternative Xucker Like Sugar, which you can use 1:1 like table sugar. Our calorie-free powdered erythritol is incorporated into the filling, and the cake is finished with our low-sugar strawberry fruit spread and white chocolate drops.

Instructions

1. For the strawberry mascarpone cake, first bake two cake layers. Grease both baking pans and line them with parchment paper. Preheat oven to 170°C (top/bottom heat).
2. Now combine all the ingredients for the batter in a large bowl and mix until smooth. (Tip: To make the batter airier: Sift the dry ingredients beforehand.)
3. Divide the batter evenly between both baking pans and bake in the oven for 30 minutes. The layers should be golden brown. Then let them cool completely.
4. Now cut each layer in half and remove the baking dome.
5. Mix all the ingredients for the cream and then beat until stiff peaks form.
6. Slice the strawberries and set aside the prettiest ones for decoration.
7. Spread the cream on the first layer and top with strawberries. Continue with all the remaining layers until you have placed the last layer on the cake.
8. Spread a thin layer of cream over the entire cake and refrigerate for at least 30 minutes.
9. Now spread a thin layer of strawberry jam over the edge of the cake. Decorate with strawberries and white chocolate. To do this, grate the white chocolate onto the cake using a vegetable peeler. Then refrigerate the strawberry mascarpone cake.
