Whether for fruit spreads, chutneys, or preserved vegetables – xylitol always works well. You can let your cravings run wild with the spices. We used a classic pickling spice blend.

Instructions

  1. For the sweet and sour pickled watermelon rind, first remove the outer, hard green skin of the watermelon with a vegetable peeler.
  2. Then remove the red flesh (leaving a thin layer attached to the rind) and enjoy it as usual.
  3. Cut the watermelon rind into bite-sized pieces and place them in a pot.
  4. Add all the remaining ingredients and bring the mixture to a boil.
  5. In the meantime, prepare the canning jars and simmer the watermelon rind for about 7 minutes.
  6. Pour the rind into the jars while still boiling hot and seal tightly.
