Grilled peach with goat cheese, Xucker Bronxe and thyme
Meat doesn't always have to end up on the grill. Vegetarian dishes can also be wonderfully prepared outdoors on the grill. We particularly like the combination of fruit and cheese. Grilled peach with goat cheese, Xucker Bronxe, and thyme combines sweet and savory flavors. Xucker Bronxe, the calorie-free erythritol-based raw sugar substitute, gives the salad a caramel note, while thyme adds a special aroma. Instructions
1. This salad is quick to make. First, halve the peaches, wash the lettuce, slice the shallot into thin rings, and cut the cheese roll into slices about 1 centimeter thick.
2. Place the peaches cut-side down on the grill.
3. After 5 minutes, check whether the peaches have a grill mark and flip them over if necessary. If not, continue grilling for a few more minutes.
4. Sprinkle the flipped peaches with Xucker Bronxe, salt, and pepper, as well as a little torn thyme, and continue grilling.
5. Place the goat cheese slices on a grill-safe baking sheet, aluminum foil, or grill tray, sprinkle with a little Xucker Bronxe, and add whole sprigs of thyme. Place the cheese on the grill with the peaches for a few minutes.
6. Meanwhile, prepare the salad dressing. Mix vinegar, oil, pepper, salt, Xucker Light, and mustard into a creamy dressing. Season to taste and set aside.
7. Arrange the salad on four plates. Distribute the shallot over the salad and arrange the peaches and goat cheese on top.
8. Drizzle the dressing over the salad plates and serve.
