Low-carb vanilla crescents (Vanillekipferl)
Vanillekipferl (vanilla crescent cookies) are a traditional German and Austrian Christmas pastry and are among the most popular Christmas cookies. These low-carb Vanillekipferl, made without added sugar and grain flour, can definitely compete with Grandma's original recipe! Recipe for flourless Vanillekipferl The classic recipe consists of flour, butter, sugar, and ground almonds. They are made from shortcrust pastry and coated in powdered sugar. We thought, "This can be done with fewer carbohydrates too!" and created our low-carb Vanillekipferl recipe using only almond flour and ground almonds.

Instructions
- Put all the ingredients for the shortcrust pastry of the low-carb Vanillekipferl in a bowl, knead well, and chill for about half an hour.
- In the meantime, sieve the powdered erythritol into a bowl and mix with Vanillexucker.
- Now preheat the oven to 170 °C (340 °F) convection.
- Take the dough out of the refrigerator and shape it into a long roll. Then cut it into about 20 pieces and shape them into crescents (Kipferl).
- Place them on a baking sheet and bake for 18-20 minutes.
- Let the hot Kipferl cool down for 3-6 minutes before tossing them while still warm (but no longer soft) in the powdered erythritol and Vanillexucker mixture.
- Once the low-carb Vanillekipferl have cooled completely, they can be stored in an airtight container.
