Strawberry cake without added sugar

Instructions
1. Cook the low-carb vanilla pudding and leave to cool.
2. Preheat the oven to 180 °C top and bottom heat.
3. Beat the egg whites with Xucker, Vanillexucker and salt until stiff. Whisk the egg yolks with the rum and carefully fold into the beaten egg whites.
4. Then mix the ground almonds with the guar gum and fold into the egg mixture. Make sure that as much air as possible remains trapped.
5. Pour the sponge cake mixture into a silicone fruit base mold and bake for 20-25 minutes until golden brown.
6. Allow to cool well, spread the vanilla pudding on the strawberry cake and spread the strawberries on the base with the tips facing upwards.
Tip: Due to the high proportion of beaten egg whites, the sponge cake is very difficult to remove from a greased metal baking pan. We therefore strongly recommend using a silicone mold to prepare the low-carb fruit base.
