Vegan pumpkin spice pancakes

Although most people first think of grandma's pumpkin soup or roasted vegetables when it comes to pumpkin recipes, we definitely put something sweet first! The number one autumn vegetable, the pumpkin, harmonizes perfectly with sweet treats like our vegan pumpkin pancakes. The pumpkin puree not only gives the vegan pancakes a beautiful color, but also ensures that you enjoy a serving of vegetables for breakfast. Vegan pumpkin pancakes – super fluffy & delicious Pumpkin puree is easy to make yourself by cutting Hokkaido pumpkin into pieces and baking it in the oven until soft. Then you just need to puree the pumpkin. This puree can be prepared well in advance and stored in the refrigerator. Don't feel like making pumpkin puree yourself? Then get a small jar of pumpkin puree in the baby food section of the supermarket. And don't forget to crown your pumpkin enjoyment with a delicious pumpkin spice latte.
Instructions
1. Combine all liquid ingredients in a mixing bowl and whisk to combine.
2. Add flour, baking powder, and salt and mix until all flour particles are dissolved and a smooth batter forms.
3. Lightly grease a pancake pan or pancake maker with a little sunflower oil and heat.
4. Use an ice cream scoop to spread the batter evenly in the pancake maker or pan. Cook the pancakes over medium heat and garnish with a little erythritol powder. (Pancakes taste best when they're still nice and warm.)
