Instructions
1. In a blender, puree all the ingredients for the low-carb ice cream to a fine liquid.
2. Pour the mixture into silicone ice cream molds and leave to set in the freezer for around 2 hours. It's best to freeze a plate with it so that you can work on it afterwards without the popsicles melting straight away.
3. Melt the chocolate drops and chop the peanuts.
4. When everything is well frozen, turn the ice cream out of the silicone molds and place it on the cold plate. Drizzle the melted chocolate over it and quickly decorate with chopped peanuts and some popped amaranth.
5. Freeze again and leave in the freezer until ready to eat.
